Restaurant & Room Service Manager
Meet Rick, our hospitality maestro. After high school his path was paved with exploration and learning, traveling through Australia and studying in Bangkok. With his degree in International Hospitality Management, he rose from trainee to his current role as Restaurant & Room Service Manager at Hilton Amsterdam Airport Schiphol.
Philip Cappone
Assistant Restaurant & Room Service Manager
Philip, who is originally from Bulgaria, started his journey at Hilton as a trainee, advancing to Supervisor and recently promoted to his current position. He is passionate about wine, obtaining multiple certifications during his studies. Working at Bowery provided hands-on education and crafting his first wine menu was memorable. Pursuing a master’s degree, Philip looks forward to endless possibilities at Bowery.
Matteo Rigoni
F&B Manager
A proud Italian from Rome who is in love with food & drinks. When Matteo joined Hilton Amsterdam Airport Schiphol he already had more than 10 years of experience in restaurants & bars in the UK and Italy. Matteo is a true hospitality professional and he loves working for Bowery for the quality of service and the amazing team.
Edwin van den Heijkant
Executive Chef
From top-notch French cuisine restaurants to Relais & Chateaux Savelberg, Edwin honed his skills. Joining Hilton The Hague in 2010 as Executive Chef, he opened F&B concepts before moving to Hilton Amsterdam Airport Schiphol in 2015. There, he launched Bowery Restaurant and Axis Lobby & Cocktail Bar with the team, earning the award for F&B Hotel of the Year 2017. Edwin now prioritizes talent development, sustainability, and innovation within his team.
Gerrie van der Hoest
Head Chef
After working for a few years in small, high-end restaurants, Gerrie was ready for a new challenge. In 2012, he met Edwin van den Heijkant and joined the Hilton team. Gerrie loves the rush and the satisfaction of seeing guests leave Bowery happy and delighted. For him, it's all about the complete experience.
Maarten Horzelenberg
Sous Chef
Maarten began his culinary journey as a trainee at Savelberg, where he had the opportunity to meet Edwin van den Heijkant. This connection led him to Hilton, where he has been thriving since 2013. Maarten is passionate about crafting memorable experiences and delighting guests with his culinary expertise. To him, Hilton is more than just a workplace—it's like family!
Hyram la Paz
Junior Sous Chef
Hyram started as a trainee in Curacao and gained valuable experience in the hotel business. Eager to develop as a professional chef, he moved to the Netherlands and began his traineeship at Hilton Schiphol in 2019, where he has remained ever since. Hyram loves the overall guest satisfaction.
Valerian Derstila
Chef de Partie
A member of the Hilton family since 2021, Valerian is proud to work for Hilton. He has embraced Hilton's values within the years he's working here and progressed from an average commis chef to an outstanding Chef de Partie, demonstrating his commitment and deserving recognition.
